Our story

Three generations,
one starter.

The starter is from 1968 — Karim's grandfather kept it alive through three moves between Tunis, Marseille and finally Saint-Gilles in 1992. We mill our flour locally, ferment slow, and shape every loaf by hand at 4 in the morning.
